Baking Instructions

Frozen Croissants Baking Instructions:

 

Transfer from freezer to refrigerator over night(Or at least 4 hours before proofing)
Place croissants on lined sheet pan 2” apart
Brush with egg wash (1)
Proof at 88F - 95F for about 4 hours (alternatively you can proof overnight at about 76F-80F)
Make sure croissants are proofed by touching with your finger , a mark should stay after you touch
Brush with egg wash again (don’t over brush)(2)
Bake at 350F for about 20 min; (use convection mode) baking time can slightly vary depending on the oven 

Frozen Scones Baking Instructions:

Place scones on lined sheet pan 2” apart
Brush with egg wash
Bake at 350F for about 35 min; convection mode preferable (make sure oven is pre-heated to this temperature
